This tangy mandarin orange chicken is a great balance of savory, sweet, and sour.

Ingredients
  • 3 Large, Boneless Chicken Thighs (cubed)
  • ⅓ cup Vegetable Oil (for frying)
  • For Sauce:
  • 2 Tbsp White vinegar
  • ½ cup Soy sauce
  • 2 Tbsp Brown Sugar
  • 1 Tbsp Cooking Sake
  • 1 Mandarin Peel
  • 5 Mandarins (juiced
  • choose a tangy variety)
  • ⅓ cup Orange Juice
  • 1 Red Chili (minced)
  • Dash of toasted sesame oil
  • 4 Tbsp Cornstarch
  • For Batter:
  • 1 cup Water
  • ½ cup Cornstarch
  • 1 cup Plain Flour
  • 1 Whole Egg
  • 2 Green Onions (minced)
  • ½ tsp Salt
  • ½ tsp White Pepper
  • ¾ tsp Garlic Powder
  • ¾ tsp Ginger Powder
Directions
  • Step 1 In a large bowl, mix the water, cornstarch, flour, and whole egg together until thoroughly combined. Add in the minced green onions, salt, white pepper, garlic powder, and ginger powder. Slowly mix the cubed chicken into the batter, coating each piece entirely. Cover and set in fridge to cool.
  • Step 2 Preheat oven to 200 C or 400 F (fan-forced) and set a large baking tray aside.
  • Step 3 In a small pot, add the white vinegar, soy sauce, brown sugar, cooking sake, mandarin juice, mandarin peel, orange juice, red chili, and toasted sesame oil. Set to medium-high heat, whisking thoroughly to break up the cornstarch. Heat until thickened (about 6 minutes), then reduce heat to low. Remove mandarin peel and stir occasionally.
  • Step 4 Set a large, deep pan to high heat and add the vegetable oil. Remove battered chicken from fridge and add to pan (Be careful of the popping oil). Using tongs, carefully turn chicken as to not ruin the breading. Cook for about 6 minutes.
  • Step 5 Using tongs, remove each piece of chicken and set on baking tray. It may take a couple of rounds of frying the chicken before the entire batch is cooked.
  • Step 6 Once all of the chicken is cooked and on the tray, use a paper towel to pat any excess oil from the chicken. Put chicken into preheated oven until lightly browned (about 6-8 minutes).
  • Step 7 Remove chicken from oven, put in a large bowl and pour all of the heated mandarin sauce over top, gently tossing as to not ruin the breading.
  • Step 8 Serve over white rice, garnish with green onions, and enjoy with a side of steamed broccoli.
