This broccoli cheddar soup is perfect for a cold evening. Accompanied with warm bread rolls, this soup will fill your stomach and your soul!

Ingredients
  • 2 Carrots (finely chopped)
  • 1 Brown Onion (diced)
  • 1 Broccoli Head (Separate Florets from Stem)
  • 3 Garlic Cloves (minced)
  • 2 Tbsp Unsalted Butter
  • 2 Cups Chicken Broth
  • ¾ tsp Black Pepper
  • ½ tsp Salt
  • ½ tsp Garlic Powder
  • 2 tbsp Flour
  • 1 cup Shredded Cheddar
  • 1 ½ Cup Whole Milk
Directions
  • Step 1 Heat a large pot to medium-high temperature and melt butter. Add in chopped carrot and onion. Cook onions until translucent (about 5 minutes).
  • Step 2 Add minced garlic to the pot. Sprinkle in flour, and stir until it disappears completely.
  • Step 3 Add chicken broth. Cover and let simmer for 5 minutes to thicken.
  • Step 4 Add whole milk, shredded cheddar (I used vintage cheddar), salt, pepper, garlic powder and broccoli florets. Cover to cook for 5 minutes.
  • Step 5 Enjoy!
