This loaded corn is eaten on the streets of Mexico. While there are many delicious variations, I hope you enjoy my version.

Ingredients
  • 4 Sweet Corn Cobs (shucked and washed)
  • 1 Large Garlic Clove (minced
  • about 1 ½ tsp)
  • ½ cup of Sour Cream of Mexican Crema
  • Cayenne Pepper (Chili powder)
  • ¼ cup Fresh Cilantro (chopped fine)
  • 1 Lime
  • Crumbly Feta or Cojita cheese (Mexican crumble cheese)
  • Sriracha (optional)
Directions
  • Step 1 Fill a large pot ¾ high with water and set to boil. Once water is boiled, put corn cobs in for 5-6 minutes. Note: After boiling, you can also lightly char the corn on the grill before adding toppings.
  • Step 2 Mix sour cream and minced garlic together (add some sriracha to sour cream mixture if you want more of a kick). Finely chop cilantro and slice lime into 4 wedges, set aside.
  • Step 3 Once corn is done, take out and pat dry. If you have skewers or corn cob holders, stick them into each cob. Brush the corn with the sour cream mixture. Roll each cob into the crumbled cheese. Sprinkle the cayenne pepper to your liking, and top with the chopped cilantro.
  • Step 4 Serve with lime wedges, get ready for a messy treat, and enjoy!!
